Dan's veggie garden has done quite well this summer. We've enjoyed lettuce, potatoes, cucumbers, a few bell peppers and a lot of zucchini. The tomatoes have yet to ripen... but in the mean time I have been asking everyone I know for inspiration with an abundance of zucchini. Here are a few ideas.
Zucchini bread, I've made chocolate zucchini bread, spiced zucchini bread and recently apple-coconut zucchini bread.
Fritters, both zucchini-feta-herb fritters and zucchini and corn fritters.
Muffins with grated zucchini and carrot.
Stir fry
Pasta bake
Ground beef tomato sauce with zucchini
Sliced zucchini baked w/ pesto and blue cheese
Shredded zucchini pie with potato and onion
Zucchini casserole w/ potato and onion
Quiche
