Dan's veggie garden has done quite well this summer. We've enjoyed lettuce, potatoes, cucumbers, a few bell peppers and a lot of zucchini. The tomatoes have yet to ripen... but in the mean time I have been asking everyone I know for inspiration with an abundance of zucchini. Here are a few ideas.
Zucchini bread, I've made chocolate zucchini bread, spiced zucchini bread and recently apple-coconut zucchini bread.
Fritters, both zucchini-feta-herb fritters and zucchini and corn fritters.
Muffins with grated zucchini and carrot.
Stir fry
Pasta bake
Ground beef tomato sauce with zucchini
Sliced zucchini baked w/ pesto and blue cheese
Shredded zucchini pie with potato and onion
Zucchini casserole w/ potato and onion
Quiche

Josh down by the lake

Shopping at its best
Dan and I got a number of smiles as we pushed the boys around the grocery store yesterday. Josh was busy being Mr. Busy 1 year old... while Ben... he decided he'd had enough.... we kept shopping... he had groceries all around him by the time we were done!

Josh, One Year
Josh recently celebrated his first birthday in style, with a picnic at the park next to our house. He continues to amaze us, how on earth did he turn one?
